Ingredients

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa or rice

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it's ready for baking.

Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and white membranes carefully. For added flavor and to ensure an even roast, lightly brush the outside of each pepper with olive oil. Stand the peppers upright in a baking dish.

Cook the Aromatics: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté until it turns translucent, which should take about 3-4 minutes. Stir in the minced garlic, cooking for an additional minute until fragrant and golden.

Brown the Ground Turkey: Introduce the ground turkey to the skillet, breaking it apart with a spoon as it cooks. Continue cooking for approximately 5-7 minutes, or until the turkey is completely cooked through and no longer pink. If there's any excess fat, drain it off.

Incorporate Spinach and Seasoning: Add the chopped spinach to the skillet and cook for about 1-2 minutes until wilted. Next, mix in the diced tomatoes, cooked quinoa or rice, Italian seasoning, paprika, salt, and black pepper. Stir all the ingredients together, allowing them to simmer for an additional 2-3 minutes to let the flavors meld.

Fill the Peppers: Remove the skillet from heat and fold in half of the shredded mozzarella cheese into the mixture. Spoon the turkey and spinach filling into each prepared bell pepper, using your spoon to pack the filling tightly.

Top with Cheese: After all the peppers are filled to the brim, evenly sprinkle the remaining mozzarella cheese over the top of each stuffed pepper.

Bake the Stuffed Peppers: Cover the baking dish with aluminum foil to prevent drying, and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese has melted, becoming bubbly and lightly golden.

Serve and Garnish: Once baked, allow the stuffed peppers to cool for a few minutes. Before serving, consider garnishing with fresh parsley for a touch of color and freshness.
