Ingredients

4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa or brown rice

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp dried oregano

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 can (14.5 oz) diced tomatoes, drained

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking the peppers.

Prepare the Peppers: Carefully cut the tops off the bell peppers and remove the seeds and membranes inside. Lightly coat the outer surfaces of each pepper with olive oil to help them roast nicely. Stand the peppers upright in a baking dish, ready to be stuffed.

      Cook the Turkey Mixture:

        - In a large skillet, heat 2 tablespoons of olive oil over medium heat.

          - Add the finely chopped onion and sauté for about 3-4 minutes, stirring frequently, until the onion turns translucent.

            - Incorporate the minced garlic, followed by the ground turkey. Add the dried oregano, smoked paprika, salt, and black pepper. Cook the mixture until the turkey is browned and fully cooked through, which should take about 5-7 minutes. Stir occasionally to break up the turkey.

              Incorporate Spinach and Quinoa:

                - Once the turkey is cooked, stir in the chopped spinach and sauté for an additional 2-3 minutes, or until the spinach is wilted and has reduced in size.

                  - Next, add the drained diced tomatoes and cooked quinoa or brown rice to the skillet. Mix everything well to ensure even distribution of flavors, then remove the skillet from heat.

Stuff the Peppers: Carefully spoon the prepared turkey and spinach mixture into each bell pepper. Pack the filling tightly but leave a small gap at the top to allow for some expansion during cooking.

Top with Cheese: Generously sprinkle shredded mozzarella cheese on top of each filled pepper, creating a delicious cheesy layer.

Bake: Cover the baking dish tightly with aluminum foil and transfer it to the preheated oven. Bake for 25 minutes, then remove the foil and bake uncovered for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.

Garnish and Serve: After baking, remove the dish from the oven and let the stuffed peppers cool for a few minutes. Just before serving, sprinkle with fresh chopped parsley for a vibrant touch.

                            Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4

                              - Presentation Tips: Serve the stuffed peppers on a colorful platter, placing them upright for a striking display. Drizzle with a little extra olive oil for sheen and garnish with additional parsley for a fresh finishing touch.
