4 large bell peppers (choose your favorite color)

1 pound ground turkey

1 cup cooked quinoa

1 small onion, finely chopped

3 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

1 cup shredded mozzarella cheese (optional)

2 tablespoons olive oil

Fresh parsley or cilantro, for garnish (optional)

Preheat Your Oven: Set your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Prepare the Bell Peppers: Slice the tops off each bell pepper and carefully remove the seeds and membranes inside. Lightly brush the outer surfaces with olive oil and place the peppers upright in a baking dish, cut side facing up.

      Cook the Ground Turkey: In a large skillet, heat the remaining olive oil over medium heat. Add the chopped onion and minced garlic, stirring continuously until the onion turns translucent, which should take about 3-4 minutes. Next, add the ground turkey to the skillet, using a wooden spoon to break it into smaller pieces. Cook thoroughly until the turkey is browned and cooked through, about 6-8 minutes.

        Make the Flavorful Filling: Stir in the diced tomatoes, cooked quinoa, ground cumin, smoked paprika, dried oregano, and season with salt and pepper. Allow the mixture to simmer on low heat for an additional 5 minutes, stirring occasionally to let the flavors meld.
