12 oz (340g) of spaghetti or penne pasta

1 lb (450g) of Italian sausage (choose between mild or spicy, based on your preference)

2 tablespoons of olive oil

1 medium onion, finely chopped

4 cloves of garlic, minced

1 bell pepper (red or green), diced

1 can (14 oz) of diced tomatoes with their juices

1 cup of chicken or vegetable broth

1 teaspoon of dried oregano

1 teaspoon of dried basil

½ teaspoon of red pepper flakes (optional, for added heat)

Salt and freshly ground pepper to taste

1 cup of packed fresh spinach leaves

½ cup of grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

    Brown the Sausage: In a large skillet over medium heat, add the Italian sausage. Using a wooden spoon, break it into small pieces as it cooks. Fry the sausage until it's nicely browned and fully cooked through, about 5-7 minutes. Remove the sausage from the skillet and transfer it to a plate; set aside.

      Sauté the Vegetables: In the same skillet, pour in the olive oil. Once the oil is shimmering, add the chopped onion and diced bell pepper. Sauté for approximately 3-4 minutes, or until they start to soften. Then, add the minced garlic and cook for an additional minute, stirring constantly, until fragrant.

        Add Tomatoes and Broth: Pour the can of diced tomatoes (with juices) into the skillet along with the chicken or vegetable broth. Stir the mixture to combine everything well. Season with the dried oregano, dried basil, red pepper flakes (if using), and salt and pepper to taste. Allow the mixture to simmer for about 5 minutes so the flavors meld.

          Combine Ingredients: Return the browned sausage to the skillet, then add the cooked pasta. Stir everything together until well combined and heated through. If the mixture appears too dry, feel free to add a splash more broth or a bit of the reserved pasta water.

            Incorporate Spinach: Slowly stir in the fresh spinach leaves, allowing them to wilt into the pasta mixture. This should take about 2 minutes.

              Serve: Once the spinach has wilted, remove the skillet from heat. Sprinkle the dish generously with grated Parmesan cheese, and gently toss to combine. Serve hot, garnished with fresh basil leaves and an additional sprinkle of cheese if desired.
