Ingredients
  

  • 4.0 pieces boneless skinless chicken breasts
  • 4.0 tablespoons olive oil
  • 4.0 cloves garlic, minced
  • 1.0 teaspoon dried oregano
  • 1.0 teaspoon dried thyme
  • 1.0 teaspoon dried rosemary
  • 1.0 teaspoon smoked paprika
  • 0.0 to taste salt
  • 0.0 to taste pepper
  • 1.0 cup cherry tomatoes, halved
  • 0.5 cup fresh parsley, chopped
  • 1.0 whole lemon, juiced
  • 1.0 whole lemon, zested

Instructions
 

  • Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, and smoked paprika. Set aside.
  • Heat the Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside on a plate, covering loosely with aluminum foil to keep warm.
  • Sauté the Garlic: In the same skillet, add the remaining 2 tablespoons of olive oil. Once heated, add the minced garlic and sauté for about 30 seconds, until fragrant (be careful not to burn it).
  • Add Herbs and Tomatoes: Stir in the dried oregano, thyme, rosemary, and cherry tomatoes. Cook for about 3-4 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  • Combine and Finish: Return the chicken to the skillet, spooning the savory mixture over the top. Squeeze the lemon juice over the chicken and sprinkle the lemon zest and chopped parsley for added freshness.
