1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 cups broccoli florets

1 bell pepper (red or yellow), sliced into strips

1 cup snap peas, trimmed

1 medium carrot, julienned

3 cloves garlic, minced

1-inch piece of fresh ginger, finely minced

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening, optional)

Salt and black pepper to taste

Cooked jasmine or brown rice, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken with 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and a pinch of salt and black pepper. Toss the chicken thoroughly to ensure it is evenly coated. Allow it to marinate for approximately 15 minutes to absorb the flavors.

    Prepare the Vegetables: While the chicken is marinating, wash and chop all the vegetables into their desired shapes. It’s best to keep the vegetables separated to add them at the right time during cooking.
