Roasted Sweet Potato and Black Bean Burritos

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup cooked brown rice or quinoa

1/2 red onion, finely diced

2 cloves garlic, minced

1 cup corn (can be frozen or fresh)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

4 large whole wheat tortillas

1 cup shredded cheese (optional: cheddar or Monterey Jack)

Salsa and sliced avocado for serving (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it reaches the proper temperature for roasting.

    Prepare the Sweet Potatoes: In a spacious bowl, combine the diced sweet potatoes with olive oil, chili powder, ground cumin, smoked paprika, salt, and pepper. Toss everything together until the sweet potatoes are well-coated with the spices.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast them in the preheated oven for approximately 25-30 minutes. Stir the potatoes halfway through to promote even cooking, until they are tender and have developed a slight caramelization.

        Sauté the Vegetables: While the sweet potatoes are roasting, heat a skillet over medium heat. Add a drizzle of olive oil and then the diced red onion. Sauté for about 3-4 minutes, or until the onion becomes soft and translucent. Next, stir in the minced garlic and corn, cooking for an additional 2-3 minutes until the garlic is fragrant and the corn is heated through.

          Combine the Filling: In a large mixing bowl, combine the roasted sweet potatoes, sautéed onion, garlic, and corn with the drained black beans, cooked brown rice or quinoa, chopped cilantro, and lime juice. Stir gently to mix all ingredients well, then taste and adjust seasoning as needed.

            Assemble the Burritos: Take one tortilla and lay it flat on a clean surface. Spoon approximately 1/4 of the sweet potato filling into the center of the tortilla. If you’re using cheese, sprinkle a bit on top of the filling. Fold in the sides of the tortilla over the filling and then roll it up from the bottom to create a burrito. Repeat this process with the remaining tortillas and filling.

              Optional - Toast the Burritos: For a crispy exterior, place the assembled burritos seam-side down in a lightly greased skillet over medium heat. Toast each side for about 2-3 minutes until they turn a golden brown and crispy.
