12 lasagna noodles

2 cups fresh spinach, finely chopped

2 cups ricotta cheese

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1 head of garlic

1 teaspoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to reveal the cloves inside. Drizzle the exposed garlic with olive oil, then wrap the entire head in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and golden. After roasting, allow the garlic to cool slightly, then squeeze the cloves into a bowl and mash them with a fork until smooth.

    Cook the Lasagna Noodles: Bring a large pot of salted water to a rolling boil. Gently add the lasagna noodles and cook them according to the package instructions until al dente, which should take about 8-10 minutes. Once cooked, drain the noodles and lay them flat on a clean kitchen towel to prevent them from sticking together.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, grated Parmesan cheese, mashed roasted garlic, finely chopped spinach, dried oregano, salt, and black pepper. Stir well until all ingredients are thoroughly mixed and the filling is creamy and well combined.

        Assemble the Rolls: Spread a thin layer of marinara sauce over the bottom of a 9x13 inch baking dish to prevent sticking. Take one lasagna noodle and spread approximately 2-3 tablespoons of the ricotta spinach filling evenly across its surface. Carefully roll the noodle starting from one end to form a snug roll. Place the roll seam-side down in the baking dish. Repeat this process with the remaining noodles and filling until all are assembled.

          Add Sauce and Cheese: Once all the rolls are lined up in the baking dish, generously pour the remaining marinara sauce over the top. For a cheesy finish, sprinkle the shredded mozzarella cheese evenly across the sauce.

            Bake the Lasagna Rolls: Cover the baking dish with aluminum foil to retain moisture while baking. Place in the preheated oven and bake for 25 minutes. After this time, remove the foil and continue baking for an additional 15 minutes, or until the cheese is bubbling and golden brown.
