3 large eggs

1 cup freshly squeezed lemon juice (about 4-5 medium lemons)

Zest of 2 lemons

¼ cup all-purpose flour

½ teaspoon baking powder

Preheat the Oven: Set your oven to preheat at 350°F (175°C). Prepare a 9x13-inch baking dish by lining it with parchment paper, allowing excess paper to hang over the edges for easy lifting later.

    Make the Crust: In a medium-sized bowl, whisk together the all-purpose flour, powdered sugar, and salt. Add the softened butter to the dry ingredients and mix with a fork or pastry cutter until the mixture achieves a texture similar to coarse crumbs. Evenly press this mixture into the bottom of the prepared baking dish, ensuring it covers the entire base.

      Bake the Crust: Place the crust in the preheated oven and bake for 15-18 minutes, or until it turns lightly golden. Once done, remove it from the oven and allow it to cool slightly as you prepare the filling.

        Prepare the Raspberry Filling: In a blender or food processor, puree the fresh raspberries until smooth. If desired, strain the puree through a fine mesh sieve to remove the seeds for a smoother texture.
