Ingredients

1 block (14 oz) firm tofu, drained and pressed

2 cups broccoli florets

1 cup bell pepper, sliced (any color you prefer)

1 medium carrot, julienned

3 tablespoons soy sauce (or tamari for a gluten-free option)

2 tablespoons mirin (substitute with rice vinegar if mirin is unavailable)

1 tablespoon maple syrup (or honey if desired)

1 tablespoon sesame oil, plus extra for frying

2 cloves garlic, minced

1 inch piece of ginger, minced

1 tablespoon cornstarch

2 tablespoons water

Sesame seeds and sliced green onions for garnish

Cooked rice or quinoa, for serving

Instructions

Prep the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. In a medium bowl, gently toss the tofu with cornstarch until all pieces are evenly coated. This step is crucial for achieving a delightful crispy texture once cooked.

Prepare the Sauce: In a small bowl, combine the soy sauce, mirin, maple syrup, sesame oil, minced garlic, and minced ginger. Whisk the mixture until well blended, then set it aside to allow the flavors to meld.

Heat the Pan: Place a large non-stick skillet or wok over medium-high heat. Add a drizzle of sesame oil and wait for it to become hot. Carefully add the tofu cubes in a single layer, ensuring they are not crowded. Let them cook undisturbed for about 5-7 minutes, allowing one side to develop a golden, crispy crust. Flip the tofu and cook for an additional few minutes until all sides are browned. Once done, remove the tofu from the pan and set it aside.

Stir-Fry the Vegetables: In the same skillet, add a little more sesame oil if necessary. Add the broccoli florets, sliced bell pepper, and julienned carrot to the pan. Stir-fry the vegetables for 5-6 minutes, or until they are vibrant and tender-crisp, making sure to stir frequently to prevent burning.

Combine Everything: Return the crispy tofu to the skillet with the cooked vegetables. Pour the prepared teriyaki sauce over the mixture, stirring well to ensure every piece is coated. Allow the dish to cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through and the sauce has thickened slightly.

Serve: Remove the stir-fry from heat. Serve the delicious tofu and vegetable mixture over a bed of cooked rice or quinoa. To elevate your dish, garnish with sesame seeds and freshly sliced green onions for a burst of flavor and crunch.
