Instructions

Prepare the Avocado Cream: In a blender or food processor, combine the flesh of the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste the cream and adjust the seasoning if necessary. Set this delicious avocado cream aside.

Season the Shrimp: In a medium mixing bowl, add the peeled and deveined shrimp. Drizzle with olive oil, then sprinkle the chili powder, cumin, garlic powder, smoked paprika, lime juice, salt, and pepper over the shrimp. Gently toss everything together until the shrimp is evenly coated. Allow the shrimp to marinate for about 10 minutes, which will help the flavors develop beautifully.

Cook the Shrimp: Heat a skillet over medium-high heat until it's hot. Add the marinated shrimp to the skillet in a single layer, making sure not to overcrowd the pan. Cook the shrimp for 2-3 minutes on each side or until they turn pink, opaque, and curl slightly. Once cooked, remove the skillet from heat and set the shrimp aside.

Warm the Tortillas: In the same skillet or on a separate dry pan, warm each tortilla over medium heat for approximately 30 seconds on each side. This will make them pliable and enhance their flavor.

Assemble the Tacos: Take each warmed tortilla and layer it with a handful of shredded red cabbage first. Next, place 2-3 shrimp on top of the cabbage, followed by a generous drizzle of the avocado cream. Finish by sprinkling fresh cilantro on top for an extra burst of flavor.

Serve: Serve the tacos immediately, accompanied by lime wedges for squeezing over the top. The lime juice will add a zesty freshness to each bite. Enjoy your vibrant and flavorful creation!
