Ingredients

1 lb (450g) boneless, skinless chicken breast, thinly sliced

1 bell pepper (any color), sliced into thin strips

1 medium onion, sliced into thin strips

1 can (15 oz) black beans, drained and rinsed

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup shredded romaine lettuce

1 medium avocado, sliced

½ cup salsa (your choice of mild or spicy)

¼ cup sour cream or Greek yogurt (optional)

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Chicken: In a mixing bowl, combine the sliced chicken breast with chili powder, ground cumin, garlic powder, salt, and pepper. Ensure the chicken is evenly coated with the spice mixture for maximum flavor.

Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink in the center. Once cooked, remove the chicken from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Introduce the sliced onion and bell pepper strips into the skillet. Sauté for 3-4 minutes, stirring frequently, until the vegetables are tender yet still retain a slight crunch.

Combine Ingredients: Add the cooked chicken back into the skillet along with the rinsed black beans. Stir to combine and cook for an additional 2-3 minutes, ensuring everything is heated through. Taste the mixture and adjust the seasoning if needed.

Assemble the Wraps: Warm the tortillas briefly in a dry skillet or microwave for a few seconds until pliable. Place a generous portion of the chicken, vegetable, and bean mixture in the center of each tortilla. Top evenly with shredded romaine lettuce, avocado slices, and a spoonful of your preferred salsa.

Wrap it Up: Fold the sides of each tortilla inward, then roll from the bottom up to create a snug wrap. If needed, secure the wrap with a toothpick to hold its shape.

Serve: Serve the wraps warm, accompanied by a dollop of sour cream or Greek yogurt on the side. Garnish with fresh cilantro for an extra burst of aromatic flavor.
