2 cups cooked chicken, shredded (leftover rotisserie chicken works wonderfully!)

1 bell pepper (choose your child's favorite color), thinly sliced

1 small onion, thinly sliced

1 tablespoon olive oil

1 teaspoon taco seasoning (mild is great for kids)

4 large flour tortillas

1 ½ cups shredded cheese (cheddar or a Mexican blend)

¼ cup sour cream (optional, for serving)

¼ cup salsa (optional, for serving)

Fresh cilantro (optional, for garnishing)

Instructions
 

Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper to the skillet. Sauté for about 3-4 minutes, stirring occasionally, until the veggies are tender and slightly caramelized.

    Incorporate the Chicken: Stir in the shredded chicken and taco seasoning. Mix everything well to ensure the chicken is evenly coated with seasoning. Cook for an additional 2-3 minutes until the mixture is heated through. Remove the skillet from heat.

      Assemble the Quesadillas: In a large skillet or griddle over medium-low heat, lay one tortilla flat. Sprinkle ½ cup of shredded cheese evenly over the tortilla, then add a generous portion of the chicken and veggie mixture on top. Finish by adding another ½ cup of cheese, and place a second tortilla atop the filling.

        Cook the Quesadilla: Cook the assembled quesadilla for about 2-4 minutes, or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a large spatula, and continue to cook for another 2-4 minutes until the other side is golden brown and crispy.

          Repeat and Slice: Remove the cooked quesadilla from the skillet. Repeat the process with the remaining tortillas, filling, and cheese. Allow the cooked quesadillas to cool for a minute before slicing them into wedges.
