1 lb (450g) flank steak, thinly sliced against the grain

4 cups fresh broccoli florets

1 red bell pepper, thinly sliced

3 cloves garlic, finely minced

1-inch piece of ginger, freshly grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil (plus more if needed)

1 teaspoon sesame oil

Salt and pepper, to taste

Cooked rice or quinoa, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Prepare the Marinade: In a medium-sized bowl, combine 2 tablespoons of soy sauce, oyster sauce, cornstarch, and a pinch of salt. Mix well, then add the thinly sliced beef, tossing until evenly coated. Allow the beef to marinate for at least 10 minutes while you prepare the vegetables.

    Blanch the Broccoli: Fill a pot with water, add a generous pinch of salt, and bring it to a boil. Once boiling, add the broccoli florets and blanch for about 2 minutes until they turn bright green and are tender-crisp. Immediately drain the broccoli and transfer it to a bowl of ice water to halt the cooking process. After a few minutes, drain again and set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. When the oil is shimmering and hot, add the marinated beef in a single layer. Sear for approximately 2-3 minutes on each side until the beef is nicely browned and cooked through. Once done, remove the beef from the skillet and set it aside on a plate.

        Cook the Vegetables: Using the same skillet, add more oil if necessary. Add the minced garlic and grated ginger, sautéing for about 30 seconds or until fragrant. Then, add the sliced red bell pepper and the blanched broccoli. Stir-fry for 3-4 minutes, occasionally stirring, until the vegetables are tender yet still crisp.

          Combine and Season: Return the cooked beef to the skillet with the vegetables. Pour in the remaining tablespoon of soy sauce and the sesame oil. Stir everything together until well combined and heated through. Taste and adjust seasoning with additional salt and pepper if needed.

            Serve: Transfer the stir-fry to a large platter or individual bowls. Garnish with a sprinkle of sesame seeds and a scattering of chopped green onions. Serve hot over a bed of fluffy rice or quinoa.
