1 lb ground beef (80% lean, 20% fat)

1 medium onion, finely diced

3 cloves of garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with juice

1 cup beef broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon freshly ground black pepper (adjust to taste)

1 bell pepper (choose any color), diced

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, sliced green onions, or fresh cilantro for garnish

Instructions
 

In a large pot or Dutch oven, pour in the olive oil and warm it over medium heat.

    Add the diced onion and bell pepper to the pot. Sauté for about 3-4 minutes, stirring occasionally, until the vegetables begin to soften and the onion is translucent.

      Incorporate the minced garlic into the mixture and continue to cook for an additional minute, allowing the garlic to become fragrant.

        Raise the heat to medium-high and add the ground beef to the pot. Use a spatula to break it apart as it cooks, browning it for approximately 5-7 minutes. Drain any excess fat if necessary to keep the chili from becoming greasy.

          Once the beef is thoroughly browned, stir in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix well to evenly coat the beef and vegetables with the spices.

            Pour in the diced tomatoes along with their juice, add the beef broth, kidney beans, and black beans. Stir everything together to combine.

              Increase the heat and bring the chili to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook for 20-25 minutes, stirring occasionally to prevent sticking.

                Taste the chili and adjust the seasoning to your preference. If you prefer a thicker consistency, uncover the pot and allow it to simmer for an additional 5-10 minutes.

                  Serve the chili hot, garnished with your choice of delicious toppings such as shredded cheese, a dollop of sour cream, sliced green onions, or fresh cilantro.
