Ingredients

For the cupcakes:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/2 cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs

1/2 cup canned pumpkin puree

1/4 cup milk (any kind, dairy or non-dairy)

1 teaspoon vanilla extract

1/2 cup brewed coffee, cooled to room temperature

For the frosting:

1/2 cup unsalted butter, softened to room temperature

2 cups powdered sugar

1/4 cup cream cheese, softened

1 teaspoon vanilla extract

1/2 teaspoon pumpkin pie spice

Brewed coffee for flavoring, as needed

Ground cinnamon for dusting

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin pan by lining it with cupcake liners to prevent sticking.

Combine Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, pumpkin pie spice, and salt until evenly combined. Set this mixture aside for later use.

Mix Wet Ingredients: In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar together on medium speed until the mixture is light and fluffy, about 3-5 minutes. Add the eggs one at a time, mixing well after each addition. Next, mix in the pumpkin puree, milk, vanilla extract, and cooled coffee until everything is well incorporated.

Incorporate Dry Ingredients: Slowly add the dry ingredient mixture to the wet ingredients, stirring gently with a spatula or spoon until just combined. Be cautious not to overmix, as this can lead to denser cupcakes.

Fill Cupcake Liners: Spoon the batter into the prepared cupcake liners, filling each liner approximately two-thirds full to allow room for rising.

Bake: Place the muffin pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. After baking, let the cupcakes cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Frosting: In a clean mixing bowl, beat the softened butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar, mixing on low speed until combined. Then, add the vanilla extract, pumpkin pie spice, and a splash of brewed coffee to create a delightful flavor. Adjust the frosting’s consistency by adding more powdered sugar for thickness or more cream cheese for a creamier texture.

Frost the Cupcakes: Once the cupcakes have cooled completely, generously spread or pipe the cream cheese frosting on top of each cupcake. If desired, you can use a piping bag with a decorative tip for an elegant finish.

Garnish: For a finishing touch, lightly dust the frosted cupcakes with ground cinnamon to enhance the fall flavors and add visual appeal.

Serve and Enjoy: Your Pumpkin Spice Latte Cupcakes are now ready to be enjoyed! Pair them with a cozy cup of coffee or tea for the perfect fall treat.
