1 cup pumpkin puree (canned or homemade)

1/2 cup milk (dairy or any non-dairy alternative)

1/4 cup maple syrup or honey

1/4 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup chopped nuts (such as walnuts or pecans) or chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or greasing it generously with oil or non-stick spray.

    Blend the Oats: In a high-speed blender or food processor, add in the rolled oats. Blend on high until the oats have turned into a fine flour-like consistency. This will serve as the base for your muffins.

      Incorporate Wet Ingredients: To the ground oats in the blender, add the pumpkin puree, milk of your choice, maple syrup or honey, melted coconut oil, eggs, and vanilla extract. Blend until the mixture is completely smooth and well-combined.

        Prepare the Dry Mix: In a mixing bowl, whisk together the baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Ensure these dry ingredients are evenly mixed to prevent any uneven flavor in the muffins.
