Ingredients

9-12 lasagna sheets (regular or gluten-free)

2 cups fresh kale, chopped

1 cup pumpkin puree (canned or fresh)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce

Olive oil (for sautéing)

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking the lasagna roll-ups.

Cook Lasagna Sheets: Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Add the lasagna sheets, cooking them according to the package instructions until they are al dente. Once cooked, carefully drain them and lay the sheets flat on parchment paper to avoid sticking.

Sauté Kale: In a spacious skillet, heat one tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes aromatic. Introduce the chopped kale into the skillet and cook, stirring frequently, until it has wilted down, roughly 4-5 minutes. Set the cooked kale aside.

Prepare Cheese Mixture: In a mixing bowl, thoroughly combine the pumpkin puree, ricotta cheese, half of the shredded mozzarella, the egg, dried oregano, dried basil, salt, and black pepper. Stir until the mixture is smooth and well integrated.

Assemble Roll-Ups: Lay out a cooked lasagna sheet on a clean surface. Spread approximately 3 tablespoons of the pumpkin-ricotta filling evenly across the sheet. Next, top this filling with a layer of the sautéed kale. Carefully roll the lasagna sheet from one end to the other, ensuring the filling stays inside. Place each rolled-up sheet seam-side down in a lightly greased baking dish.

Repeat Process: Continue the filling and rolling process with the remaining lasagna sheets and filling, arranging each roll-up closely together in the baking dish for an enticing presentation.

Add Sauce and Cheese: Generously pour the marinara sauce over the assembled roll-ups, ensuring each roll is coated. Sprinkle the remaining mozzarella and the grated Parmesan cheese evenly over the top for a delicious, cheesy crust.

Bake: Cover the baking dish securely with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbling and beautifully golden brown.

Cool and Serve: Once baked, remove the dish from the oven and allow it to cool for about 10 minutes before slicing. For a finishing touch, garnish with fresh basil or parsley if desired for a vibrant pop of color.
