1 lb (450g) large shrimp, peeled and deveined

1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

1 red bell pepper, cut into 1-inch squares

1 green bell pepper, cut into 1-inch squares

1 small red onion, cut into quarters

3 cloves garlic, minced

¼ cup extra virgin olive oil

2 tablespoons soy sauce

2 tablespoons honey

Juice of 1 lime

1 teaspoon ground ginger

1 teaspoon paprika

Salt and pepper, to taste

Skewers (if using wooden skewers, soak them in water for 30 minutes)

Marinate the Shrimp: In a mixing bowl, combine the extra virgin olive oil, soy sauce, honey, lime juice, minced garlic, ground ginger, paprika, and a sprinkle of salt and pepper. Whisk the ingredients together until well blended. Add the peeled and deveined shrimp to the marinade, ensuring every piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, though letting them marinate for 1 to 2 hours will deepen the flavors.

    Prepare the Skewers: If you opted for wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning. While they're soaking, preheat your grill to a medium-high heat setting.
