2 medium zucchinis, spiralized into noodles

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup fresh basil pesto (can be store-bought or homemade)

2 tablespoons extra virgin olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), diced into small pieces

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper, to taste

¼ cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves, for garnish (optional)

Instructions
 

Heat the Pan: In a large skillet, pour in 2 tablespoons of extra virgin olive oil and set the heat to medium. Allow the oil to heat up, then add the finely chopped onion. Sauté for approximately 3-4 minutes or until the onion becomes translucent and fragrant.

    Cook the Chicken: Introduce the bite-sized chicken pieces into the skillet. Season them with salt, freshly ground black pepper, and the Italian seasoning blend. Cook the chicken for around 5-7 minutes, stirring occasionally, until it reaches a nice golden brown and is completely cooked through. Once cooked, remove the chicken from the skillet, placing it on a plate, and set aside.

      Sauté the Vegetables: In the same skillet that you used for the chicken, add the minced garlic along with the diced bell pepper. Sauté the mixture for about 2-3 minutes until the bell pepper begins to soften. Next, mix in the halved cherry tomatoes and allow them to cook for an additional 2 minutes, letting them blister and release their juices.

        Combine Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Pour in the fresh basil pesto, stirring well to ensure that the chicken and vegetables are evenly coated. Cook for an extra 2 minutes to let the flavors meld together beautifully.

          Add the Zucchini Noodles: Carefully fold in the spiralized zucchini noodles. Continue to cook for another 2-3 minutes, just until the noodles become tender yet retain a slight crunch. Be cautious not to overcook them to prevent mushiness.

            Finish the Dish: Evenly sprinkle the grated Parmesan cheese over the skillet contents, mixing gently to distribute it throughout. Taste the dish and adjust the seasoning with more salt and pepper if needed.
