Peppery Garlic Parmesan Polenta

1 cup coarse cornmeal (polenta)

4 cups vegetable broth (or water)

1/2 cup freshly grated Parmesan cheese

2 tablespoons unsalted butter

Prepare the Broth: In a large saucepan, bring 4 cups of vegetable broth (or water) to a rolling boil over medium-high heat. Stir in 1/2 teaspoon of sea salt to enhance flavor.

    Whisk in the Polenta: Once the broth is boiling, gradually whisk in the 1 cup of coarse cornmeal. Be sure to stir constantly to prevent any lumps from forming and to achieve a smooth mixture.

      Cook the Polenta: Reduce the heat to a gentle simmer and cook the polenta for about 25–30 minutes, stirring frequently. The polenta is done when it thickens and becomes creamy, so be vigilant and stir every few minutes to prevent sticking to the bottom of the pan.

        Sauté the Garlic: While the polenta is cooking, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 2–3 minutes, or until fragrant and golden, taking care not to let it burn as burnt garlic can impart a bitter taste.

          Combine Ingredients: Once the polenta has finished cooking, remove the saucepan from heat.
