Ingredients

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cut into small cubes

4-6 tablespoons ice water (more if needed)

3 medium ripe pears, peeled, cored, and thinly sliced

1 cup fresh blueberries

½ teaspoon ground cinnamon

2 tablespoons brown sugar

Juice of 1 fresh lemon

1 egg, for egg wash

1 tablespoon coarse sugar, for topping

Instructions

Make the Dough: In a large mixing bowl, combine the all-purpose flour, salt, and granulated sugar. Take the cold, cubed butter and integrate it into the flour mixture using a pastry cutter or your fingertips until the texture resembles coarse crumbs. Gradually pour in the ice water, one tablespoon at a time, mixing gently until the mixture holds together. Form the dough into a flat disk, wrap it tightly in plastic wrap, and refrigerate for a minimum of 1 hour to firm up.

Prepare the Filling: In a separate bowl, combine the thinly sliced pears, fresh blueberries, ground cinnamon, brown sugar, and lemon juice. Gently toss the fruits to coat them with the sugar and cinnamon mixture. Let the fruit sit for a few minutes to marinate while the dough is chilling in the refrigerator.

Preheat the Oven: Set your oven to preheat at 400°F (200°C), ensuring it's hot and ready for baking.

Roll Out the Dough: Once chilled, remove the dough from the refrigerator. On a lightly floured surface, roll the dough into a circle approximately 12 inches in diameter. Carefully transfer the rolled dough onto a parchment-lined baking sheet.

Assemble the Galette: Spoon the fruit filling into the center of the rolled dough, leaving a generous 2-inch border around the edges. Fold the border of the dough over the filling, creating pleats as you go for a beautifully rustic presentation. Don’t worry if some of the fruit mixture remains visible.

Add Egg Wash: In a small bowl, beat the egg to create an egg wash. Brush this mixture over the folded edges of the dough, ensuring a golden finish. Sprinkle the coarse sugar over the top of the galette for an added crunch and sweet touch.

Bake the Galette: Place the galette in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the fruit filling is bubbling with excitement.

Cool and Serve: Once baked, remove the galette from the oven and allow it to cool for about 10 minutes on the baking sheet. Slice and serve it warm or at room temperature, with an option to add a scoop of creamy vanilla ice cream or a dollop of fluffy whipped cream on top for an extra indulgent treat.
