2 ripe peaches, sliced into wedges

1 small red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 tablespoons vegetable oil (for stir frying)

Salt and freshly ground black pepper, to taste

Sesame seeds, for garnish

Fresh basil or mint leaves, for garnish

Instructions
 

Prep the Veggies: Begin by washing all vegetables thoroughly. Slice the peaches just before adding them to the stir fry to keep them fresh and juicy. Prepare the bell peppers, zucchini, red onion, and broccoli per the descriptions above.

    Make the Sauce: In a small mixing bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil until well combined. Set the sauce aside to allow the flavors to meld.

      Heat the Wok/Pan: In a large wok or non-stick skillet, heat the vegetable oil over medium-high heat until it shimmers, indicating that it's hot and ready for stir frying.

        Sauté Aromatics: Add the minced garlic and ginger to the hot oil. Stir-fry for approximately 30 seconds, or until fragrant. Take care not to let them burn, as this can impart a bitter taste.

          Add Veggies: Introduce the sliced red onion, bell peppers, and broccoli florets to the wok. Stir-fry these vegetables for about 3-4 minutes, allowing them to soften slightly while still maintaining a crisp texture.

            Incorporate Zucchini and Snap Peas: Add the sugar snap peas and julienned zucchini to the mix. Continue stir frying for an additional 2-3 minutes until all the vegetables are cooked through but still vibrant and tender-crisp.

              Introduce the Peaches: Carefully fold in the sliced peaches and then pour the prepared sauce over the entire stir-fry. Toss all the ingredients together gently to ensure they are well-coated with the sauce. Cook for another 2 minutes until the peaches are warmed through.
