4 bone-in, skin-on chicken thighs

2 ripe peaches, pitted and diced

1/2 cup peach preserves

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil

Prepare the Marinade: In a medium mixing bowl, combine the diced peaches along with peach preserves, soy sauce, apple cider vinegar, honey, minced garlic, grated ginger, black pepper, and salt. Whisk together until all ingredients are well blended and the peaches are well coated.

    Marinate the Chicken: Take the chicken thighs and place them in a large resealable plastic bag or a shallow dish.
