Ingredients

1 large head of cauliflower, cut into bite-sized florets

3 tablespoons extra-virgin olive oil

4 cloves of garlic, finely minced

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon smoked paprika

½ cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped (for garnish)

Juice of 1 fresh lemon

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s hot enough for roasting.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, minced garlic, sea salt, black pepper, and smoked paprika. Use your hands or a spatula to toss everything together until every floret is evenly coated in the flavorful mixture.

Add Parmesan: Next, sprinkle half of the grated Parmesan cheese over the seasoned cauliflower. Toss gently again to distribute the cheese among the florets.

Arrange on Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup. Spread the cauliflower mixture in a single layer on the sheet, making sure there is enough space between the florets to allow for even roasting.

Roasting: Place the baking sheet in the preheated oven and roast for approximately 25-30 minutes. The cauliflower should become golden brown and tender. Halfway through the cooking time, give the pan a good shake to ensure all sides cook evenly.

Finish with Cheese: When the cauliflower is beautifully roasted, remove the baking sheet from the oven and sprinkle the remaining Parmesan cheese on top. Return the baking sheet to the oven for an additional 5 minutes, allowing the cheese to melt and become bubbly.

Garnish and Serve: Once done, take the baking sheet out of the oven and drizzle fresh lemon juice over the lovely roasted cauliflower. Garnish with finely chopped parsley to add a vibrant touch. Serve warm and enjoy the delicious flavors!
