Ingredients

4 bone-in pork chops (approximately 1 inch thick)

1 cup freshly grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs blend (oregano, basil, thyme)

Salt and freshly ground black pepper, to taste

2 large eggs

2 tablespoons Dijon mustard

1/4 cup all-purpose flour

Olive oil or butter, for frying

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Pork Chops:

    - Begin by patting the pork chops dry with paper towels to remove excess moisture. This ensures a crispy crust. Season generously on both sides with salt and freshly ground black pepper.

      Set Up the Breading Station:

        - In a shallow bowl, mix together the grated Parmesan cheese, panko breadcrumbs, garlic powder, smoked paprika, and dried Italian herbs. Stir until well combined and set this mixture aside.

          - In a separate bowl, whisk together the eggs and Dijon mustard until the mixture is smooth and homogenous.

            - Place the all-purpose flour in a third shallow dish, ready for dredging the pork chops.

              Bread the Chops:

                - Take each pork chop and dredge it in the flour, ensuring both sides are evenly coated. Shake off any excess flour.

                  - Next, dip the floured chop into the egg mixture, allowing any surplus to drip off for an even coating.

                    - Finally, coat the chop in the Parmesan and panko mixture, pressing firmly to help the coating adhere. Repeat this process for all pork chops.

                      Heat the Pan:

                        - In a large skillet, heat a couple of tablespoons of olive oil or butter over medium heat until it is hot and shimmering, which indicates it’s ready for frying.

                          Cook the Chops:

                            - Carefully place the breaded pork chops into the skillet, cooking in batches if necessary to avoid overcrowding. Fry the chops for approximately 4-5 minutes on each side, or until the crust is a beautiful golden brown and the pork has reached an internal temperature of 145°F (63°C).

                              - Once cooked, transfer the pork chops to a plate lined with paper towels to drain any excess oil.

                                Serve:

                                  - Garnish the crispy Parmesan crusted pork chops with a sprinkle of freshly chopped parsley for a burst of color and flavor. These chops pair wonderfully with a side of roasted vegetables or a refreshing garden salad for a complete meal.
