1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons poppy seeds

1 cup buttermilk

⅓ cup vegetable oil

1 large egg

Zest of 1 large orange

1 teaspoon vanilla extract

Juice of 1 large orange (approximately ¼ cup)

Optional: ¼ cup powdered sugar (for glaze)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it thoroughly with non-stick spray or butter.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and poppy seeds. Ensure that everything is well combined to promote even rising.

      Combine Wet Ingredients: In a separate medium bowl, whisk together the buttermilk, vegetable oil, egg, orange zest, vanilla extract, and freshly squeezed orange juice. Mix until the ingredients are smooth and well integrated.

        Combine Mixtures: Gradually pour the wet mixture into the dry mixture. Use a rubber spatula or wooden spoon to gently fold together until just combined. It’s important to not over-mix; a few lumps in the batter are perfectly fine.
