Ingredients

8 oz elbow macaroni

4 cups vegetable broth

1 cup milk (whole or low-fat)

2 cups sharp cheddar cheese, shredded

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

½ tsp black pepper

Salt, to taste (starting with ½ tsp)

1 tbsp unsalted butter

½ cup cream cheese, cubed

Fresh parsley, finely chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, combine the elbow macaroni and vegetable broth. Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking. Once boiling, reduce the heat and let it simmer for approximately 8-10 minutes, or until the pasta is al dente and most of the broth has been absorbed.

Add Flavor: Lower the heat to a gentle simmer, then stir in the garlic powder, onion powder, smoked paprika, black pepper, and the initial ½ teaspoon of salt. Mix well to evenly distribute the spices throughout.

Create a Creamy Base: Add the unsalted butter and cubed cream cheese into the pot. Stir continuously until both the butter and cream cheese have completely melted and are thoroughly combined with the pasta.

Incorporate Milk: Gradually pour in the milk while stirring constantly. This will help achieve a smooth and creamy texture. Ensure there are no lumps and the mixture is well blended.

Cheese it Up: Once the pasta and creamy base are heated through, slowly add the shredded sharp cheddar cheese, a handful at a time. Keep stirring until the cheese melts completely, forming a rich and velvety sauce that coats the macaroni.

Serve: Give your mac and cheese one final stir. Taste and adjust the seasoning with additional salt if necessary. Serve the dish hot, garnished with a sprinkle of finely chopped fresh parsley to add a pop of color and freshness.
