1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 bell pepper (red or yellow), diced

1 medium onion, diced

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Optional toppings: sliced avocado or shredded cheese

Instructions
 

Prepare the Chicken: In a small mixing bowl, combine the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Thoroughly coat the chicken breasts with this spice blend, ensuring every surface is evenly seasoned.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil shimmers, carefully add the seasoned chicken breasts. Sear each breast for about 4-5 minutes on each side until they attain a golden brown crust. Once done, remove the chicken from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet with residual flavor, add the diced onion and bell pepper. Sauté for approximately 3-4 minutes, allowing the vegetables to soften and become aromatic. Stir in the corn and cook for an additional 2 minutes.

        Combine Ingredients: Introduce the black beans, diced tomatoes (including their juices), and the fresh lime juice to the skillet. Gently stir to unify the ingredients, creating a colorful and hearty mixture.
