One-Pan Sausage and Veggie Skillet

1 lb (450g) Italian sausage (choose from pork, chicken, or turkey)

1 medium onion, thinly sliced

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 zucchini, diced into small cubes

1 cup cherry tomatoes, halved

3 cloves garlic, finely minced

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for optional topping

Instructions
 

Preheat the Pan: Place a large skillet over medium heat and pour in the olive oil. Allow it to heat for a minute or until shimmering.

    Cook the Sausage: Add the Italian sausages to the hot skillet. Cook them for 6-8 minutes, turning occasionally, until they are browned on all sides and completely cooked through. Once done, remove the sausages from the skillet, let them cool slightly, then slice them into bite-sized pieces.

      Sauté Vegetables: In the same skillet, toss in the sliced onion and both bell peppers. Sauté for approximately 5-7 minutes, stirring occasionally until the vegetables are tender and aromatic.

        Add Zucchini and Garlic: Incorporate the diced zucchini and minced garlic into the skillet. Cook for another 3-4 minutes, stirring regularly, until the zucchini is just tender and the garlic is fragrant.

          Combine Ingredients: Return the sliced sausages back to the skillet. Add the halved cherry tomatoes, dried oregano, smoked paprika, salt, and pepper. Stir gently to ensure all ingredients are evenly coated and well mixed.

            Simmer: Reduce the heat to low and let the mixture simmer for about 5 minutes. This will allow the tomatoes to soften and release their juices, creating a deliciously flavorful sauce.

              Serve: Remove the skillet from heat. Garnish the dish with freshly torn basil leaves and, if desired, sprinkle with grated Parmesan cheese before serving.
