1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup long-grain white rice, thoroughly rinsed under cold water

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth, preferably low-sodium

1 cup frozen mixed vegetables (a blend of peas, carrots, and corn)

1 cup sharp cheddar cheese, shredded

1 cup cream of chicken soup (store-bought or homemade)

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's ready for baking.

    Sauté Chicken: In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the diced chicken. Season the chicken with salt, pepper, paprika, and garlic powder. Sauté the chicken for about 5-7 minutes, stirring occasionally, until the pieces are golden brown on the outside. Once cooked, remove the chicken from the skillet and set it aside on a plate.

      Cook Aromatics: In the same skillet, add the finely chopped onion and minced garlic. Sauté for about 2-3 minutes, stirring frequently, until the onion becomes translucent and fragrant.

        Combine Ingredients: Stir in the rinsed long-grain rice, chicken broth, frozen mixed vegetables, and cream of chicken soup. Add the dried thyme and mix everything thoroughly to ensure all ingredients are well combined and the rice is evenly coated.
