1 cup quinoa, thoroughly rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (choose your favorite color)

1 can (15 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese (plus an additional ½ cup for topping)

1 teaspoon dried oregano

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish (optional)

Preparation: In a large, oven-safe skillet, heat the olive oil over medium heat. Once hot, add the diced onion, bell pepper, and minced garlic. Sauté for approximately 3-4 minutes, stirring occasionally, until the vegetables are softened and fragrant.

    Cook the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes, or until the beef is browned and fully cooked. Season the mixture with salt, pepper, oregano, cumin, and smoked paprika. Stir well to combine and let it cook for another minute to enhance the flavors.
