4 boneless, skinless chicken breasts

2 cups fresh spinach, roughly chopped

1 cup mushrooms, finely diced (cremini or button work well)

1 small onion, finely diced

2 cloves garlic, minced

1 cup ricotta cheese

1/2 cup freshly grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 cup shredded mozzarella cheese (for topping)

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s ready for baking.

    Cook the Vegetables: Heat the olive oil in a skillet over medium heat. Once the oil is shimmering, add the diced onion and sauté until it becomes translucent, approximately 3-4 minutes. Stir in the minced garlic and continue cooking for an additional minute, releasing the garlic’s fragrance. Next, add the finely chopped mushrooms to the skillet and sauté until they are tender and their moisture has evaporated, about 5 minutes. Finally, fold in the chopped spinach and cook just until it wilts. Remove the skillet from the heat and allow the mixture to cool slightly.

      Prepare the Filling: In a mixing bowl, combine the sautéed vegetable mixture with the ricotta cheese, grated Parmesan cheese, dried oregano, salt, and black pepper. Stir well until all ingredients are evenly incorporated into a creamy filling.

        Prepare the Chicken: Working with one chicken breast at a time, place it between two sheets of plastic wrap or parchment paper.
