Ingredients

1 can (16 oz) refrigerated buttermilk biscuits

1 cup marinara sauce (or your favorite pizza sauce)

1 cup shredded mozzarella cheese

1 small bell pepper, diced (choose any vibrant color)

1/2 cup cherry tomatoes, halved

1/2 cup mushrooms, sliced

1/4 cup red onion, finely chopped

1/2 cup fresh spinach (you can use slightly wilted spinach)

1 teaspoon dried oregano

1 teaspoon garlic powder

Olive oil (for greasing the skillet)

Salt and pepper to taste

Fresh basil leaves (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it’s hot and ready for your pizzas.

Prepare the Skillet: Lightly grease a large cast-iron skillet or an oven-safe non-stick skillet with olive oil. This will help keep the biscuit base from sticking.

Roll Out the Biscuits: Take each biscuit and flatten it either using your fingers or a rolling pin until they are about 1/4-inch thick. Arrange these biscuit disks in a single layer at the bottom of the prepared skillet. Feel free to slightly overlap the edges if necessary to create a cohesive base.

Layer the Sauce: Evenly spread the marinara sauce over the biscuit base, ensuring every inch is well-covered for maximum flavor.

Add Veggies: Scatter the diced bell pepper, halved cherry tomatoes, sliced mushrooms, chopped red onion, and fresh spinach over the sauce. Season with dried oregano, garlic powder, and sprinkle salt and pepper to your liking.

Top with Cheese: Generously sprinkle shredded mozzarella cheese over the layered veggies and sauce, making sure to cover them well for a cheesy delight in every bite.

Bake: Carefully place the skillet in the preheated oven. Bake for about 20-25 minutes, or until the biscuits are puffed up, golden brown, and the cheese is bubbly and slightly browned.

Garnish and Serve: Once baked, remove the skillet from the oven and allow it to cool for a couple of minutes. If desired, garnish with fresh basil leaves for a pop of flavor and color. Slice into mini pizzas and serve while warm.
