6 small flour tortillas

1 cup fresh spinach, chopped

1 cup mushrooms, finely chopped

1 small onion, diced

2 cloves garlic, minced

4 large eggs

1/2 cup milk

1 cup shredded cheese (choose from cheddar, mozzarella, or a flavorful blend)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional, for a hint of spice)

Olive oil for sautéing

Fresh herbs (such as parsley or thyme) for garnish

Preheat the Oven: Begin by setting your oven to 375°F (190°C). Prepare a muffin tin by lightly greasing each cup with cooking spray or a drizzle of olive oil to ensure the quiches will easily release once baked.

    Prepare the Tortillas: Use a round cutter or the rim of a glass to cut the tortillas into circles that will fit snugly in the muffin tin cups. Aim for about 6 rounds. Gently press each tortilla circle into a muffin cup, shaping it into a little bowl. Set these prepared tortilla cups aside.

      Sauté the Vegetables: In a medium skillet, heat approximately 1 tablespoon of olive oil over medium heat. Once hot, add the diced onion and minced garlic. Sauté these aromatics until they become soft and translucent, which should take about 3-4 minutes. Next, introduce the finely chopped mushrooms to the skillet and continue cooking for an additional 5 minutes, or until the mushrooms release their moisture and become tender. Finally, add the chopped spinach, stirring until it wilts, which will take around 2 minutes. Once cooked, remove the skillet from heat and let the vegetable mixture cool slightly.

        Make the Egg Mixture: In a large mixing bowl, crack open the eggs and whisk them together with the milk, salt, black pepper, and paprika until everything is well combined and frothy.

          Combine Ingredients: Carefully add the sautéed vegetable mixture to the egg mixture, folding gently to combine. Next, mix in the shredded cheese, ensuring it's evenly dispersed throughout the egg and vegetable mixture.

            Fill the Tortilla Cups: Using a ladle or measuring cup, pour the egg and vegetable filling into each tortilla cup, filling them about three-quarters full to allow room for the quiches to puff up as they bake.

              Bake: Place the muffin tin in your preheated oven. Bake for approximately 20-25 minutes, or until the quiches are set and the tops are golden brown. To check for doneness, insert a toothpick into the center of one quiche—if it comes out clean, they are ready!

                Cool and Serve: Once baked, remove the muffin tin from the oven and allow the mini quiches to cool for a few minutes. Carefully run a fork around the edges to help release them from the tin before gently lifting each quiche out. Garnish with fresh herbs, if desired, for an added pop of color and flavor.
