Ingredients
  

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh berries (choose from strawberries, blueberries, raspberries, or a mix)

1/4 cup berry sauce (can be store-bought or homemade)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Crust: In a medium-sized bowl, combine graham cracker crumbs with melted butter. Mix thoroughly until all crumbs are evenly coated with butter.

    Set the Crust: Take small glasses or jars and add approximately 1-2 tablespoons of the graham cracker mixture into each. Press down gently with a spoon to flatten and form an even crust layer. Set the glasses aside.

      Make the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese on medium speed until it becomes smooth and creamy. Gradually add in the powdered sugar and vanilla extract, continuing to mix until everything is well combined and fluffy.

        Whip the Cream: In a separate bowl, whip the heavy whipping cream using a hand mixer or stand mixer until stiff peaks form; this means the cream should hold its shape when you lift the beaters out.

          Combine the Mixtures: Gently fold the whipped cream into the cream cheese mixture. Use a spatula to incorporate the whipped cream without deflating it, blending until the mixture is light and airy.

            Layer the Parfaits: Begin layering the parfaits: Divide about 2-3 tablespoons of the cheesecake filling evenly over the crust in each glass. Follow with a layer of fresh berries and drizzle some berry sauce on top.

              Repeat Layers: Continue layering with the remaining cheesecake filling, fresh berries, and berry sauce until the glasses are filled to the top. Reserve a few berries for the final garnish if you wish.

                Chill: Cover each parfait with plastic wrap and place them in the refrigerator. Allow to chill for at least 2 hours or overnight so the flavors meld and the cheesecake sets.

                  Serve: When ready to serve, add a few additional fresh berries on top of each parfait, drizzle with extra berry sauce, and garnish with a sprig of mint if desired.
