2 cups cooked chicken breast, shredded or diced

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup kalamata olives, pitted and chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

For the Flatbreads:

4 small whole wheat or pita flatbreads

Extra olive oil for brushing

Optional: Additional crumbled feta and chopped parsley for garnishing

Prepare the Chicken Salad: In a large mixing bowl, combine the shredded or diced chicken with the diced cucumber, halved cherry tomatoes, finely chopped red onion, chopped kalamata olives, crumbled feta cheese, and chopped parsley. Mix well to distribute the ingredients evenly.

    Make the Dressing: In a separate small bowl, whisk together the fresh lemon juice, extra-virgin olive oil, and a pinch of salt and pepper.
