1 large cucumber

8 oz cream cheese (softened to room temperature)

1 tablespoon fresh dill (finely chopped)

1 tablespoon fresh chives (finely chopped)

1 tablespoon freshly squeezed lemon juice

Salt and freshly ground black pepper, to taste

8 slices of whole grain bread

1 tablespoon butter (optional, for toasting)

Optional: microgreens or sprouts for garnish

Prepare the Cucumber: Start by thoroughly washing the cucumber under cold water. Slice the cucumber into thin rounds, approximately 1/4 inch thick, and arrange them on a paper towel. This will help absorb any excess moisture, preventing sogginess in your sandwiches.

    Make the Cream Cheese Spread: In a mixing bowl, combine the softened cream cheese, finely chopped dill, chopped chives, lemon juice, salt, and black pepper. Use a fork or spatula to blend the ingredients together until the mixture is smooth and well-combined, ensuring a delightful spread.

      Toast the Bread (Optional): For a delightful crunch, spread a thin layer of butter on each slice of whole grain bread.
