Ingredients

2 small boneless, skinless chicken breasts

1/2 cup seasoned bread crumbs

1/4 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1 cup marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

4 whole wheat pita pockets

Fresh basil leaves, for garnish

Olive oil spray

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure a perfect cooking environment for your pita triangles.

Prepare the Chicken: Rinse the chicken breasts and pat them dry with paper towels. Season both sides generously with salt and pepper. In a shallow dish, mix together the bread crumbs, grated Parmesan cheese, Italian seasoning, and garlic powder until well combined. Dredge each chicken breast in this mixture, pressing down firmly to ensure an even coating.

Bake the Chicken: Arrange the coated chicken breasts on a lined baking sheet. Lightly spray them with olive oil to help create a crispy texture. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and golden brown. Once done, remove and allow them to cool slightly before slicing into bite-sized pieces.

Assemble the Pitas: Carefully cut each pita pocket in half to create two halves. Gently open each half with your fingers to create a pocket. Begin layering with a generous spoonful of marinara sauce in each pocket, followed by the diced baked chicken pieces, and then sprinkle a generous amount of shredded mozzarella cheese on top.

Bake the Pita Triangles: Place the stuffed pita halves back on the baking sheet with the cut sides facing up. Return them to the oven and bake for an additional 5-7 minutes, or until the cheese is melted, bubbly, and just starting to turn golden.

Garnish and Serve: Carefully remove the pita triangles from the oven. Garnish with fresh basil leaves for an aromatic touch. Cut each filled pita half into triangles for easy serving. Serve immediately with additional marinara sauce on the side for dipping. Enjoy your fantastic Mini Chicken Parm Pita Triangles!
