Ingredients

1 pound boneless, skinless chicken breast, diced

1 tablespoon extra virgin olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1 bell pepper (red, green, or yellow), thinly sliced

1 small onion, thinly sliced

1 cup shredded sharp cheddar cheese

1 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped

12 mini cone-shaped taco holders or homemade taco cones

1 lime, cut into wedges

Instructions

Prepare the Chicken Filling: In a medium-sized bowl, add the diced chicken breast along with the extra virgin olive oil, chili powder, ground cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well until the chicken is evenly coated with all the spices.

Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken mixture to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is thoroughly cooked and boasts a golden-brown color. Remove the chicken from the skillet and set aside on a plate.

Sauté Vegetables: In the same skillet, add the thinly sliced bell pepper and onion. Sauté for approximately 3-4 minutes, allowing them to become tender yet retain some crispness. After the veggies are cooked, return the chicken to the skillet and stir everything together for another minute. Remove from heat.

Assemble Taco Cones: If you are using pre-made mini taco cones, position them in a taco holder for stability. If crafting your own, take small tortillas, fold them into a cone shape, and secure with toothpicks if necessary. Generously fill each cone with the chicken and vegetable mixture.

Add Toppings: Sprinkle a layer of shredded sharp cheddar cheese over the top of each filled cone. For an extra touch, you can place the filled cones under a broiler for 1-2 minutes until the cheese melts and bubbles. Keep a close watch to avoid burning.

Garnish and Serve: Finish each taco cone with a dollop of sour cream or Greek yogurt, a sprinkle of freshly chopped cilantro, and a squeeze of lime juice for a bright flavor. Serve immediately, accompanied by extra lime wedges on the side for an added zesty kick.
