1 package of pre-made pie crusts (contains 2 crusts)

2 cups fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon freshly squeezed lemon juice

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional for a nutty flavor)

1 egg, beaten (for egg wash)

Coarse sugar for sprinkling on top

Prepare the Cherry Filling: In a medium saucepan, combine the halved cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and almond extract (if using). Stir to ensure all ingredients are mixed thoroughly. Cook over medium heat for about 5-7 minutes, stirring continuously until the mixture begins to bubble and thicken. Once the filling has thickened, remove it from heat and allow it to cool completely.

    Preheat the Oven: Preheat your oven to 375°F (190°C) so it’s ready for baking.

      Roll Out the Dough: On a lightly floured surface, roll out the pre-made pie crusts to a thickness of about 1/8 inch. Using a round cookie cutter (approximately 3 inches in diameter), cut out circles. Depending on the size of your cutter, you should yield around 12-16 circles.

        Assemble the Bites: Arrange half of the dough circles on a baking sheet lined with parchment paper. Spoon approximately 1 tablespoon of the cooled cherry filling into the center of each circle, being cautious not to overfill to prevent spillage.

          Seal the Bites: Lightly brush the edges of each filled circle with the beaten egg to create a seal. Place a second dough circle atop each filled piece and press the edges firmly together using a fork to seal them securely. To allow steam to escape, make a few small slits in the top of each pie.

            Egg Wash and Sugar Sprinkle: Brush the tops of the assembled cherry bites with the remaining beaten egg, then sprinkle a small amount of coarse sugar on top for an extra sweet and crunchy finish.

              Bake: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the tops of the bites are golden brown and flaky.
