2 cans young green jackfruit in brine (not syrup), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup BBQ sauce (your choice of store-bought or homemade)

1 teaspoon smoked paprika

Salt and pepper to taste

For the Nacho Cups:

12 mini tortilla cups (available store-bought or can be made at home)

1 cup shredded cheddar cheese (or a dairy-free alternative if desired)

1 cup diced tomatoes

1/2 cup diced red onion

1/2 cup sliced black olives

1/4 cup fresh cilantro, chopped
