2 cups cornbread mix

1 cup milk

1 large egg

2 cups cooked chicken, shredded (rotisserie chicken is an excellent choice)

1 cup BBQ sauce (choose your favorite brand or make your own)

1 cup sharp cheddar cheese, shredded

1/2 cup green onions, finely chopped

1/4 cup fresh cilantro, chopped (optional)

Cooking spray or oil for greasing the muffin tin

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a standard muffin tin by generously spraying it with cooking spray or lightly greasing it with oil to prevent sticking.

    Make the Cornbread Batter: In a large mixing bowl, combine the cornbread mix, milk, and egg. Using a whisk or spoon, mix until just combined. Avoid over-mixing; you want the batter to be smooth but be cautious of leaving any lumps behind.

      Prepare the Chicken: In another bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is fully coated. Feel free to adjust the amount of BBQ sauce to suit your taste—more sauce will add extra flavor!

        Fill the Muffin Tin: Take approximately 2 tablespoons of the cornbread batter and pour it into each muffin cup until they are half full. Next, add about a tablespoon of the BBQ chicken mixture on top of the batter in each cup. Finally, spoon in another tablespoon of cornbread batter to completely cover the chicken.
