2 large apples (Granny Smith or Honeycrisp work well), peeled, cored, and diced

1 tablespoon fresh lemon juice

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon grated nutmeg

1 tablespoon all-purpose flour

1 package (14 oz) refrigerated pie crusts (or your favorite homemade pie dough)

1 egg, beaten (for egg wash)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper to avoid sticking.

    Prepare the Apples: In a medium mixing bowl, combine the diced apples with the lemon juice, granulated sugar, ground cinnamon, grated nutmeg, and flour. Toss the mixture well until the apples are thoroughly coated. Allow it to rest for about 10 minutes to let the flavors meld beautifully.

      Roll Out the Dough: On a lightly floured work surface, carefully roll out the pie crusts until they are approximately 1/8 inch thick. Using a round cookie cutter or a large glass, cut out circles measuring about 4-5 inches in diameter.

        Assemble the Pies: Place a generous heaping tablespoon of the apple filling in the center of each dough circle. Be cautious not to overfill! Fold the dough over to create a half-moon shape. Firmly press the edges together to seal, using a fork to crimp the edges and add a decorative touch.
