Ingredients

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsweetened applesauce

1/2 cup milk (your choice of dairy or plant-based)

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 cup diced apples (peeled and cored, approximately one medium apple)

1/4 cup chopped walnuts or pecans (optional)

1 tablespoon brown sugar (for topping)

1 teaspoon cinnamon (for topping)

Instructions

Preheat the Oven: Set your oven to preheat at 350°F (175°C). Prepare a mini muffin tin by either greasing it lightly or lining it with mini muffin liners for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Ensure all dry ingredients are well blended to avoid lumps.

Combine Wet Ingredients: In a separate bowl, mix the unsweetened applesauce, milk, vegetable oil (or melted coconut oil), and the large egg. Whisk until the mixture is smooth and all components are fully incorporated.

Combine Mixtures: Gradually pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined; be careful not to overmix. Fold in the diced apples and any chopped nuts (if you're using them) with a spatula to retain the airiness of the batter.

Fill Muffin Cups: Using a spoon or a small ice cream scoop, divide the batter among the mini muffin cups, filling each one about two-thirds full to allow for rising during baking.

Prepare the Topping: In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture evenly over the top of the muffin batter in the cups for a sweet, crunchy topping.

Bake: Place the muffin tin in the preheated oven and bake for 12 to 15 minutes. The muffins are done when a toothpick inserted into the center comes out clean. Keep an eye on them to prevent over-baking.

Cool and Serve: After baking, let the muffins cool in the pan for about 5 minutes. Then, carefully transfer them to a wire rack to cool completely. Enjoy them warm or at room temperature, delighting in the delicious aroma of apple and cinnamon wafting through your kitchen!
