Mini Air Fryer Eggplant Pizzas

½ teaspoon salt

¼ teaspoon black pepper

½ cup marinara sauce

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Prepare the Eggplant: Start by preheating your air fryer to 375°F (190°C). While it's heating up, slice the eggplant into ½-inch thick rounds and lay them out on a paper towel. Lightly sprinkle salt on both sides of each slice. Allow the eggplant to sit for 15-20 minutes; this process helps draw out moisture and reduce any bitterness. After the time is up, gently pat the eggplant rounds dry with another paper towel.

    Season the Eggplant: In a mixing bowl, combine the olive oil, garlic powder, Italian seasoning, salt, and black pepper. Mix well to create a flavorful seasoning paste. Use a pastry brush to coat both sides of each eggplant slice with this seasoning mixture.

      Air Fry the Eggplant: Place the seasoned eggplant slices in a single layer in the air fryer basket, making sure not to overcrowd (do this in batches if necessary).
