4 cups fresh corn kernels (approximately 6 ears of corn) or 2 cans (15 oz each) of corn, drained

1 cup creamy mayonnaise

1 cup sour cream

1 cup crumbled feta cheese (for a more traditional flavor, cotija can be used)

1 teaspoon chili powder

1 teaspoon smoked paprika

1 clove garlic, finely minced

1 jalapeño, finely chopped (remove seeds for a milder flavor)

½ cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper, to taste

Remove the corn from the water, let it cool, and then use a knife to carefully cut the kernels off the cobs. If using canned corn, simply drain and rinse the kernels under cold water, then set aside.
