For the Lamb Burgers:

1 lb ground lamb

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1 tsp dried oregano

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional for a kick)

1/2 tsp salt

1/4 tsp freshly ground black pepper

1/4 cup fresh parsley, chopped

1 tbsp olive oil (for cooking)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp fresh lemon juice

Salt and pepper to taste

To Serve:

Warm pita bread or toasted burger buns

Sliced tomatoes

Sliced red onion

      Make the Lamb Burger Mixture:

        - In a large mixing bowl, combine the ground lamb, finely chopped red onion, minced garlic, ground cumin, ground coriander, dried oregano, smoked paprika, cayenne pepper (if you like a bit of heat), salt, black pepper, and chopped parsley.
