Mediterranean Couscous Salad

1 cup couscous

1 ½ cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

½ red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped (plus extra for garnish)

¼ cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

¼ teaspoon garlic powder (optional)

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a rolling boil. Once boiling, stir in the couscous, cover the saucepan, and immediately remove it from the heat. Allow it to sit for about 5 minutes, or until the couscous has absorbed the broth completely. Once done, fluff the couscous with a fork and set it aside to cool.

    Prepare the Vegetables: As the couscous cools, prepare the vegetables. Dice the cucumber and bell pepper, finely chop the red onion, and halve the cherry tomatoes. Set all the vegetables aside in a bowl.

      Combine Ingredients: In a large mixing bowl, add the cooled couscous, together with the halved cherry tomatoes, diced cucumber, bell pepper, chopped red onion, sliced Kalamata olives, and crumbled feta cheese. Gently mix to combine all the ingredients.

        Make the Dressing: In a small bowl, combine the olive oil, red wine vinegar, dried oregano, salt, pepper, and garlic powder (if using). Whisk thoroughly until the dressing is well-blended.
