Ingredients

2 cups rotini pasta

1 lb boneless, skinless chicken breasts, grilled and diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Instructions

Cook the Pasta:

    - In a large pot, bring a generous amount of salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta thoroughly and rinse it under cold water to halt the cooking process. Set the cold pasta aside in a large mixing bowl.

      Prepare the Chicken:

        - If you haven’t grilled the chicken yet, start by seasoning the chicken breasts with salt, pepper, and garlic powder on both sides. Grill them over medium heat for approximately 6-7 minutes per side or until they reach an internal temperature of 165°F (74°C) and are fully cooked. Remove from the grill and allow the chicken to rest for a few minutes before dicing it into bite-sized pieces.

          Combine Salad Ingredients:

            - In the bowl with the cooled pasta, add the diced chicken, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and chopped parsley. Gently fold the ingredients together to ensure an even distribution.

              Make the Dressing:

                - In a separate small mixing bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined. Taste the dressing and adjust the seasoning with extra salt or pepper if desired.

                  Dress the Salad:

                    - Drizzle the prepared dressing over the pasta salad and carefully toss everything together until the pasta and vegetables are fully coated in the dressing, ensuring all ingredients are well mixed.

                      Chill and Serve:

                        - Cover the pasta salad and refrigerate it for at least 30 minutes to allow the flavors to blend harmoniously. This dish can be served cold or at room temperature, making it a versatile option for gatherings or meal prep.
